Their fleet of luxury vessels range in size from intimately carrying 700 passengers, exclusively adult ships to 3100 passengers, catering for all ages, tailoring their service to all of their customers’ needs.
An exciting opportunity has now arisen as a Chef Patissier to work on our client’s flagship cruise liner, travel the world, whilst getting paid and having the opportunity to work with their celebrity chefs. The positions are offered on a 6 month renewable contract.
You will work onboard our client’s flagship cruise liner, in a structured and developmental environment, with quality produce and superb equipment in highly professional, diligent and dedicated teams.
The galley typically delivers in excess of over 1000 covers, freshly prepared at every sitting.
You will be working in a large team of up to 165 chefs from mixed nationalities, managing a section of typically 15 Pastry Chefs comprising of Pastry Chefs, CDP Pastry, Junior CDP Pastry, Demi-CDP Pastry, 1st and 2nd Commis Pastry Chefs and Commis de Cuisine Pastry Chefs.
You will work 10 hours a day over a period of 2 – 3 shifts, 7 days a week for the duration of your contract.
Reporting to the Executive Sous Chef, you will be responsible for managing the patisserie area within the galley operation and to ensure that all staff comply with relevant company standards and procedures, with the aim of providing the company desired service product.
You will manage, monitor, develop and train members of your team to ensure the provision of high quality, professionally prepared patisserie products.
You will effectively manage your own area, ensure adequate resourcing of team, complete appraisals identifying development opportunities and provide guidance, motivation and direction as required.
You will ensure all work is carried out safely, efficiently and in accordance with all current safety and company regulations, including the Public Health Policy, HESS, FSP and ILO.
You will identify areas of improvement to ensure attention to detail is achieved by the team and a consistent passenger dining experience provided, continually striving to improve passenger satisfaction scores.
You will oversee the creation of celebration cakes and desserts for special occasions on board such as weddings and the renewal of vows.
You will liaise with the Chef de Partie - Pastry to confirm the daily menu requirements and discuss the daily working processes of the team.
You will effectively monitor and manage costs and resources within own area and inform the Chef de Cuisine of any issues immediately.
You will effectively resolve all passenger complaints and comments regarding food production for own area and work collaboratively with Restaurant Managers and the Head Waiter ensuring a smooth and efficient passenger experience.
You will attend and undertake Open Galley events such as cooking demonstrations and corporate sponsored social events, as and when required.
There will also be the opportunity of working with celebrity chefs.
In addition to your professional duties you will also have to deliver staff training and have ship safety duties and responsibilities.

Knowledge and Skills:
You will be an accomplished Pastry Chef ideally with cruise line work experience.
To succeed in this role you need to be professional, diligent, disciplined and committed to consistent quality assurance on a large scale. You should therefore have experience of working in a 4/5 star volume hotel or restaurant, ideally rosette / Michelin standard.
It is essential that you are professionally trained Pastry Chef with relevant qualifications, e.g. City & Guilds 7061/2, recognised hotel / culinary diploma and ideally NVQ 3 Bakery, Patisserie or food manufacture or equivalent.
You should have comprehensive knowledge of pastry techniques and skills ideally supported with a Level 3 Award in Supervising Food Safety in Catering.
You should have a good command of written and spoken English. If English is not your first language you will have to take the Marlins test.
You should ideally have a valid ENG1 medical certificate.
You should be PC literate competent in the use of MS Office.
Superb inter-personal skills and instant credibility are essential as you will be inter-facing with a number of people from different backgrounds, nationalities and religions.
