A major Cruise Line is looking for an Executive Sous Chef to join their fleet of large and luxurious ships.

Responsibilities:

  • Help to manage the culinary activities in their state-of-the-art galleys
  • Maintain food cost at reasonable levels, without affecting quality or standards
  • Prepare international cuisine in multiple venues
  • Enforce USPH and HACCP procedures for sanitation and cleanliness
  • Monitoring workstations and staff for adherence to all procedures
  • Manage and train large culinary staff numbers to consistently meet performance standards

Requirements:

  • Managed a multicultural team in an upscale hotel, cruise ship, restaurant, or high-volume food service facility
  • Cruise ship experience will be beneficial but is not essential
  • Must be COVID vaccinated or be prepared to get it
  • Prepared to be away for home for several months at a time
