Head Chef (Expedition Sailing Vessel) – Arctic

I am looking for a Head Chef to join a sailing vessel immediately.

As Head Chef you are responsible for the consistent preparation of cuisine, resulting in outstanding guest satisfaction. You ensure the standards and consistent quality in the daily preparation as per company standards. Additionally, you are responsible for the smooth running of the small galley and manage areas of stock, wastage control and hygiene practices within the galley.

Responsibilities:

• Implementing, maintaining and monitoring company standard of food quality,
• In charge of stock control and ordering of food provisions in coordination with Hotel Manager,
• Responsible for hygiene, safety and environmental regulations in galley and store areas,
• Cleaning of the galley after each shift,
• Monitor and control expenditures,
• Available for passengers’ requests, inquiries and complaints with regards to special diets and dealing with this in a correct and swift manner,
• To plan and monitor the galley duties of the Steward,
• To train the Steward regarding galley duties,
• Be informed of SMS manual and other company related publications,
• To report incidents and near misses and/or dangerous situations to the Safety Committee,
• To prepare a handover (ISM 07.05J) for reliever reflecting assigned tasks and duties and the present state of maintenance and administration,
• Participate in safety drills and be aware of the assigned duties and safety equipment.

Requirements:

• 5 years’ experience cooking in a well-established restaurant, hotel with at least 1 year shipboard
• Culinary Diploma
• Familiar with MS Office
• Must have Basic Safety, Designated Security Duties and seafarer Medical
• Covid vaccinated
• Good command of spoken and written English
• Strong knowledge of the fundamentals of cooking
• Flexible and able to work under pressure
• Hands-on approach

Other details:

• Small crew area and shared cabin
• Remote sailing area so communication will be poor most of the time
