Executive Chef (Cruise) – Worldwide

Navis Consulting are seeking an experienced Executive Chef to join a cruise vessel. The Executive Chef is responsible for the overall operation, production, maintenance and key personnel in the galley on board the ship.

To be considered for this role a brief of your main tasks & activities is listed below:

• Responsible for holding daily menu briefings and tasting of dishes to ensure high nutritional value and variety of food;
• Prepare the voyage report on staffing, breakage and equipment and send to the Fleet Executive Chef, Hotel Manager at the end of each cruise;
• To ensure all menus, allergens, dietary requirements are communicated by the Galley to the Restaurant and Bar team;
• Planning for any shore side food shopping;
• Training, development, delegation & evaluation of the Galley team
• Overseeing preparation and production of all food on-board to be served to both guests and crew taking into consideration dietary, religious and cultural requirements;
• Responsible for keeping to the set food cost budgets for both crew and guests without affecting the guest & crew experience through quality;

Qualifications for this role:

• Extensive food preparation experience in high volume cruise ships/top quality hotels or restaurants held similar rank.
• Ability to write and create menus
• 3 years of verifiable certificate of apprenticeship/Culinary Master’s Degree.
• Completion of an approved certificate or degree granting culinary program.
• Must be able to supervise staff,
• Ability to read, write and speak English fluently.
• Ability to provide culinary presentations and demonstrations.
• Must be in possession of all valid STCW certificates:
