Executive Sous Chef (Cruise) – Worldwide

A leading Cruise Line is looking for an Exec Sous Chef to provide a strong, consistent, loyal support mechanism to the on-board Executive Chef at all times ensuring food standards and disciplines are maintained on a daily basis.

Responsibilities:

  • Responsible for holding daily menu briefings and tasting of dishes to ensure the high nutritional value and variety of food.
  • Being on the Galley floor with the team, coaching, tasting, correcting, praising are all key ingredients.
  • Being physically present in each outlet before opening time to check the quality and temperature of food on offer.
  • Ensure that all menus, allergens, dietary requirements are communicated by the Galley to all Food and Beverage outlets.
  • Must be familiar with the Fidelio Material Management system and responsible for checking and authorizing movements of all food related items.

Requirements:

  • Extensive experience of progressive food preparation experience in high volume cruise ships/top quality hotels or restaurants held similar rank.
  • Completion of an approved certificate or degree granting culinary program.
  • Must be able to supervise staff on a large scale
  • Ability to read, write and speak English fluently.
  • Ability to provide culinary presentations and demonstrations.
  • Must be in possession of all valid STCW certificates:
